Kikkoman Usukuchi Shoyu is lighter in color and saltier than classic Japanese Kikkoman soy sauce. The bright amber notes are reflected in a rich umami flavor.

Mainly used in western Japan, specifically the Kansai region (Kyoto/Osaka), Usukuchi enhances the taste of dishes without darkening other ingredients. Ideal for seasoning steamed vegetables, udon noodles, and simmered dishes, it is also used to improve the flavor of light-colored sauces.
